Beef Fillet with Porcini Mushrooms and Truffle

Ingredients

For 4 servings

  • 500 g porcini mushrooms
  • 8 g Tartoofo black truffle (8 to 12 slices as needed)
  • 1 kg beef fillet (4 fillets)
  • 15 g fresh parsley, finely chopped
  • 2 garlic cloves
  • Fine salt as needed
  • Freshly ground black pepper, to taste
  • 5 tablespoons extra virgin olive oil
  • Lamb's lettuce (corn salad), to serve

Method

How to make beef fillet with porcini mushrooms and truffle

  1. To prepare the beef fillet with porcini mushrooms and truffle, first clean the porcini mushrooms thoroughly, then slice them horizontally.
  2. Heat 3 tablespoons of extra virgin olive oil in a non-stick frying pan. Add the two garlic cloves, lightly crushed, and cook until golden. Add the porcini mushrooms and cook over a medium heat for 7–8 minutes. You can deglaze the mushrooms with a little white wine during cooking.
  3. Season with salt and pepper. Once the mushrooms have softened, add the chopped parsley and mix well, then remove from the heat.
  4. Finally, add Tartoofo truffle slices.
  5. Cover the pan with a lid and set aside.

Now prepare the meat.

  1. Tie kitchen string around each beef fillet to help it retain its shape during cooking. Drizzle a little oil into a non-stick frying pan and place the fillets in the pan to sear.
  2. Cook the fillets for approximately 5 minutes on each side over a high heat, turning them with kitchen tongs or a fork. Halfway through cooking, season with a pinch of salt. You can deglaze the fillets with a little white wine during cooking. Cook it rare, medium rare or well cooked as wished.
  3. Once the meat is cooked, finish by adding some Tartoofo truffle slices.

Now that the fillets are ready, begin plating. Arrange some lamb's lettuce, which has been cleaned and washed, on a serving plate. Place the beef fillets on top, with the porcini mushrooms alongside.

You can finish it by adding some more Tartoofo truffle slices on top. Your beef fillet with porcini mushrooms and truffle is ready to serve!

Storage

We recommend eating beef fillet with porcini mushrooms and truffle immediately. However, if necessary, it can be stored for up to one day in an airtight container in the refrigerator.
